- 125 g flour
- 100 ml oil
- 250 ml water
- 3 eggs
- a pinch of salt
*For the cream:*
- 4 egg yolks
- 5 tablespoons sugar
- 5 tablespoons cornstarch
- 450 ml milk
- 1 packet of Ness (18 g)
- 50 g chocolate (preferably with high cocoa content)
- 2 tablespoons cocoa powder
*For decoration:*
- 250 ml whipped cream
- 75 g dark chocolate
- 2 tablespoons milk
- 1 tablespoon butter
- 50 g white chocolate (for decoration)
Preparation
1. Preparing the eclair dough:
In a saucepan, add the water, oil, and a pinch of salt. Place the saucepan over medium heat and let the mixture come to a boil. Once the water starts to boil, remove the saucepan from heat and add all the flour at once. Stir vigorously with a spatula or wooden spoon until the dough pulls away from the sides of the pan and forms a smooth ball. Allow the dough to cool completely.
2. Adding the eggs:
Once the dough is cool, add the eggs one at a time, mixing well after each addition. The dough will become sticky and slightly elastic. It is important not to add the next egg until the first one is fully incorporated.
3. Shaping the eclairs:
Preheat the oven to 220°C. Transfer the dough to a piping bag with a round tip. On a baking sheet lined with parchment paper, pipe sticks about 10 cm long. Leave space between them, as they will expand in the oven.
4. Baking the eclairs:
Bake the eclairs for 15 minutes at high heat, then reduce the temperature to 180°C and continue baking for another 15 minutes. DO NOT open the oven door during baking, as the eclairs may collapse. Once they are golden brown, turn off the oven and let the eclairs cool inside for 10 minutes.
5. Preparing the cream:
In a saucepan, combine the milk, coffee, cocoa, and chocolate. Gently heat the mixture until the chocolate is completely melted. In a bowl, beat the egg yolks with the sugar until pale, then add the cornstarch and mix well. Gradually pour the chocolate mixture over the eggs, stirring constantly to avoid curdling. Return the mixture to the saucepan and cook over low heat, stirring continuously, until thickened like pudding. Transfer the cream to a bowl and let it cool.
6. Preparing the glaze:
In a bowl, combine the broken chocolate pieces, milk, and butter. Microwave the mixture for 1 minute, then stir well. If the chocolate is not completely melted, microwave for another minute.
7. Assembling the eclairs:
Gently cut the tops off the eclairs. Fill each eclair with the cooled cream and, optionally, you can add a layer of whipped cream before replacing the top. Glaze with melted chocolate and decorate with grated white chocolate.
