Start by preparing the yeast by adding sugar to warm water. Stir gently and let it sit for a few minutes until a foam forms on the surface, indicating that the yeast is active. This step is essential for achieving a fluffy and airy dough. In a large bowl, sift the flour, ensuring there are no lumps, to obtain a fine dough. Then add the yeast and sugar water mixture, along with the salt. The salt is important as it helps develop flavors and controls fermentation.

Knead the dough for about 10 minutes until it becomes elastic and smooth. If necessary, add a little flour, but be careful not to overdo it, as a dough that is too dry will not rise properly. Once the dough is kneaded, cover it with a clean towel or plastic wrap and let it rise in a warm place, away from drafts, until it doubles in size. This rising process will take about 1 hour.

After the dough has risen, sprinkle a clean surface with flour and turn the dough out. Roll it out with a rolling pin until you have a sheet about 1 cm thick. Make sure the edges are well floured to prevent sticking. Evenly sprinkle raisins and cinnamon over the entire surface of the dough, giving it a delicious flavor and interesting texture. Roll the dough tightly, starting from one side, ensuring the roll is even.

Once you have a compact cylinder, join the ends of the roll to form a ring. Place this ring in a round, oiled pan, making sure it doesn't stick. Cover it again and let it rise for another 30 minutes. In the meantime, preheat the oven to 200 degrees Celsius. After it has risen, place the ring in the oven and bake for 20 minutes. Then, reduce the temperature to 180 degrees and let it bake for another 40 minutes.

When ready, the ring should be golden brown and emit a tempting aroma. Let it cool for a few minutes before removing it from the pan. It will be perfect to serve warm, alongside a cup of tea or coffee. Enjoy every slice of this aromatic delight!
