Leek Ciulama (Vegan)
Leek, an often underestimated ingredient, becomes the star of this delicious recipe, full of flavors and textures. Start by cleaning the leek, slicing it into thin rounds to ensure even cooking. Choose a pot of suitable size and add the leek rounds, filling it with water until it is completely covered. Place the pot over medium heat so that the water begins to simmer slowly, releasing the sweet and slightly spicy aroma of the leek.
While the leek is boiling, prepare the olives. Choose green or black olives, depending on your preference, and lightly score them with a sharp knife. This step is not just aesthetic but also functional, as it allows the flavors to be released into the water. Once the water has started to boil, add the olives over the boiling leek. Let them blend with the flavors, adding a salty and character-filled taste to the dish.
In a separate pan, melt a few tablespoons of oil and add the chopped onion. Let it sauté over medium heat, stirring occasionally, until it becomes transparent and slightly golden. This will add a depth of flavor that will enrich the final dish. Once the onion is ready, add it to the pot with the leek and olives, mixing well to combine all the ingredients.
Let everything simmer on low heat so that the flavors intensify and the ingredients meld together. It is important to stir occasionally to prevent sticking to the bottom of the pot. At this point, the dish should have a pleasant texture, and the aroma should become irresistible.
After about 20 minutes of boiling, when all the ingredients are well integrated, it’s time to thicken the soup. In a separate bowl, mix the flour with 200 ml of water using a whisk to avoid lumps. Once you achieve a smooth mixture, gradually add it to the pot, stirring continuously to ensure even distribution.
After a few minutes of cooking, the dish will begin to take on a creamy consistency. At this stage, it’s time to add your personal touch, so you can season with salt, pepper, and vegeta to taste. Mix well and let it simmer for a few more minutes to allow the spices to fully integrate. Finally, serve the dish warm, perhaps alongside a slice of fresh bread or croutons, to turn every bite into a memorable culinary experience.
Ingredients: 8 leeks, 3 medium onions, 200g olives, 100g oil, 3 tablespoons flour, water to cover the leeks + 200ml for the flour mixture, salt, pepper, and vegeta to taste.
