Shortbread Cookies
Prepare a baking tray with parchment paper, ensuring it is evenly covered to prevent the cookies from sticking. In a medium bowl, mix together the flour and salt, making sure the ingredients are well incorporated. This mixture will form the base of our cookies, so it is important for it to be homogeneous. In another bowl, use a mixer to beat the room temperature butter until it becomes fluffy and creamy, a process that will add air and make the cookies softer. Gradually add the sugar, continuing to beat so that it integrates well. Don’t forget to scrape down the sides of the bowl with a spatula, ensuring everything is well mixed. Once you have a homogeneous mass, add the vanilla extract to give the cookies a delicious flavor that will make them irresistible.
After homogenizing the vanilla, start incorporating the flour and salt mixture, mixing with a spatula or by hand until a fairly firm but still malleable dough forms. Divide the dough into two equal discs, wrapping them in plastic wrap. They will be left in the refrigerator for an hour, allowing them to firm up slightly, which will make rolling out easier.
While the dough cools, preheat the oven to a low temperature of 160°C (325°F), ensuring it is well heated before introducing the cookies. After an hour, take a disc of dough out of the refrigerator and roll it out on a lightly floured surface or between two sheets of parchment paper to prevent sticking. Form a thin sheet, which can be round or rectangular, depending on your preference. If opting for a round shape, cut the cookies into triangles, and if choosing the rectangular shape, cut into strips.
Arrange the cookies on the prepared tray and bake for about 10 minutes. It is essential that the cookies remain a light color to achieve the desired texture. When you take them out of the oven, the cookies will seem soft, but don’t worry; as they cool, they will harden. This will allow them to have a perfectly crunchy and pleasant texture. The cookies can be stored at room temperature for a month, making them ideal to enjoy with a cup of tea or coffee.
For an extra touch of refinement, the cooled cookies can be glazed in melted chocolate, giving them a festive presentation and an intense flavor. It is important not to bake the cookies too much, as excessive exposure to heat can cause them to become brown and lose the desired texture. So, stay close to the oven and check them carefully!
