Chocolate, Vanilla, and Fruit Cake: A Sweet Story

Dear friends, today I invite you to discover together a cake recipe that not only delights the taste buds but also brings a touch of nostalgia to our hearts. This chocolate, vanilla, and fruit cake was created with much love and beautiful memories, dedicated to a special day in my mother's life, a day I will never forget. It is a recipe that, when prepared, revives pleasant memories and gathers the family around the table. Let’s begin our culinary journey!

Preparation time: 30 minutes
Baking time: 40-50 minutes
Total time: 1 hour and 20 minutes
Number of servings: 12

Ingredients

For the base:
- 3 eggs
- 1 jar (400 g) of jam (recommended: apricot, sour cherry, or pear)
- 350-400 g flour
- 1 packet vanilla sugar
- 1.5 packets baking powder
- 2-3 teaspoons vinegar or lemon juice
- ½ cup oil

For the chocolate cream:
- 400 g dark chocolate (preferably for baking)
- 4 eggs
- ½ teaspoon butter

For the vanilla cream:
- 1 packet instant vanilla pudding
- 700 ml cold milk

Fruits:
- 3 kiwis
- a few slices of orange
- brown raisins

For decoration:
- 1 packet chocolate glaze
- colored candies
- chocolate sprinkles and candies
- small pearls for decoration

Preparing the base

1. Preparing the ingredients: Start by preparing all the ingredients. Make sure the eggs are at room temperature, as they whip better. Choose a quality jam that will add flavor to the cake.

2. Mixing the ingredients: In a bowl, combine the fruit jam, the 3 egg yolks, oil, and vanilla sugar. Use a whisk to mix everything well until you obtain a smooth composition.

3. Adding the dry ingredients: Add the baking powder mixed with vinegar (or lemon juice) and mix again. Then, gradually incorporate the flour, mixing carefully to avoid lumps.

4. Whipping the egg whites: In another bowl, beat the 7 egg whites (you will need egg whites for the chocolate cream) until you obtain a firm foam. Gently fold in almost half of the egg whites into the batter, mixing softly with up-and-down motions.

5. Baking the base: Grease a cake pan with a little butter and dust it with flour. Pour the batter into the pan and place it in the preheated oven at 180°C for 40-50 minutes. Check if it’s done using the toothpick method: if it comes out clean, the base is baked. Let it cool on a rack.

Preparing the creams

1. Chocolate cream: Melt the chocolate in a double boiler, covered with a lid for even melting. Once melted, add the butter and mix until smooth. Remove from heat and add the 4 egg yolks one at a time, mixing constantly. Finally, fold in the remaining whipped egg whites and refrigerate until the base is ready.

2. Vanilla cream: In a small bowl, add the pudding powder and gradually the cold milk. Whisk vigorously with a whisk or mixer for a few minutes until the cream thickens. Reserve 3-4 tablespoons of cream for decoration.

Assembling the cake

1. Cutting the base: Once the base has completely cooled, use a long knife to cut it into two or three layers, depending on your preference. Place the first layer on a serving plate.

2. Soaking and filling: Soak the base with compote, coffee, or caramel syrup. Add a layer of 10-12 mm of vanilla cream, followed by the kiwi and orange slices, and a few raisins. Place another layer of the base and repeat the process, finishing with the last layer.

3. Covering the cake: Cover the cake with the chocolate cream, spreading it evenly over the surface. Chill the cake while preparing the glaze.

Decorating the cake

1. Glaze: Mix the glaze powder with 4 tablespoons of cold water and apply it evenly over the cake. This will give it a shiny and appetizing appearance.

2. Garnishing: Use colored candies, chocolate sprinkles, and pearls to decorate the cake. With a disposable piping bag, you can add lines of vanilla cream on top for an artistic effect. I chose to make a heart shape, considering the cake was prepared around the days of love celebration.

Serving and variations

This cake is perfect for any occasion: anniversaries, parties, or simply to indulge the family. It can be served alongside a scoop of freshly whipped cream or, if you prefer, add vanilla ice cream for a delicious contrast.

If you wish to vary the ingredients, you can use other types of jam, such as sour cherry or berry jam. Additionally, the chocolate cream can be used for filling the cake, while the vanilla cream can be reserved to be served in cups with a few fresh raspberries on top.
