Preparation time: 30 minutes
Cooking time: 2 hours
Total time: 2 hours and 30 minutes
Servings: 6-8
Ingredients:
- 750 g ground pork and beef
- 100 g smoked pork belly, diced
- 200 g round grain rice
- 4 large onions, finely chopped
- 3 tablespoons sunflower oil
- 1 large carrot, grated
- 1 egg
- 2 bunches of dill, chopped
- 1 bunch of parsley, chopped
- 3 sprigs of thyme
- 1 bay leaf
- 1 tablespoon freshly ground black pepper
- 1 teaspoon salt
- pickled cabbage (enough to wrap the rolls)
- sour cream, for serving
- polenta, for serving
- hot peppers, for serving
Instructions:
1. Prepare the ingredients
Start by rinsing the rice under cold running water until the water runs clear. Then, let it soak for about 30 minutes. This step is essential as it helps the rice absorb moisture and become fluffier during cooking.
2. Heat the oil
In a skillet, add the sunflower oil and sauté the chopped onion over medium heat until it becomes soft and translucent. This step will add wonderful flavor to your filling. Once the onion is ready, add the smoked pork belly and grated carrot, allowing them to combine for 3-4 minutes.
3. Mix the filling
In a large bowl, combine the ground pork and beef, soaked rice, the onion and pork belly mixture, egg, dill, parsley, black pepper, and salt. Mix well with a wooden spoon, ensuring all ingredients are thoroughly incorporated. If you enjoy a stronger flavor, you can also add some crushed garlic.
4. Fill the cabbage leaves
Lay the pickled cabbage leaves on a flat surface. Take a portion of the filling (about a tablespoon), place it in the center, and fold the leaf around the filling to form a roll. Make sure to tuck in the edges to prevent the filling from spilling out. If you prefer larger rolls, feel free to use more filling.
5. Arrange in the pot
At the bottom of a large pot, place some chopped cabbage leaves to prevent the rolls from sticking. Then, arrange the rolls in two rows, sprinkling some thyme sprigs and a bay leaf between them. Cover with more chopped cabbage and add enough water to cover the rolls. This will help them cook evenly.
6. Cook the rolls
Cover the pot with a lid and place it in a preheated oven at 160°C (320°F). Cook the rolls for one hour covered, then remove the lid and continue cooking for another hour. This step will allow the rolls to develop a golden color and delicious aroma.
7. Serve
Once the rolls are ready, serve them hot, accompanied by sour cream, fluffy polenta, and hot peppers for an extra kick. It’s a perfect combination that blends flavors and textures in an absolutely delightful way.
Practical tips:
- Vegetarian option: You can replace the meat with finely chopped mushrooms and vegetables for a vegetarian version.
- For added flavor: Include some smoked meat or chorizo in the filling to enhance the taste.

Nutritional benefits:
This recipe is rich in protein due to the meat and egg, while the rice provides carbohydrates for energy. Additionally, pickled cabbage is an excellent source of probiotics, which support digestive health.
