Moldovan Alivenci: A traditional delicacy that brings joy to every table

If you are from Moldova or have had the chance to visit this beautiful region, you have surely encountered the delicious dish called alivenci. This simple and tasty recipe is perfect for both children and adults, quickly becoming a favorite choice for lunches, dinners, or even parties. With a rich aroma and creamy texture, alivenci can be served as is or as a side dish for various meals. In this recipe, I will present my favorite version, slightly adapted but keeping the essence of this traditional dish.

Preparation time: 15 minutes
Baking time: 35-40 minutes
Total time: 55-60 minutes
Servings: 6

Ingredients

- 250-300 g cornmeal (choose according to your preferences)
- 1 l milk (preferably whole for a richer taste)
- 1 teaspoon salt (adjustable to taste)
- 600 g cottage cheese (make sure it is fresh)
- 200 ml sour cream (optional, but recommended for a creamier taste)
- 4 large eggs (separate the yolks from the whites)
- 150 g salty sheep cheese (or feta cheese if you prefer a less salty variant)

Step by step: How to prepare Moldovan alivenci

1. Preparing the milk: Start by placing the milk in a large pot over medium heat. Add a teaspoon of salt and wait until the milk starts to boil. It is essential not to leave it unattended as it can boil over quickly.

2. Adding the cornmeal: When the milk is boiling, gradually add the cornmeal, stirring constantly with a wooden spoon. This step is crucial to prevent lumps from forming. Continue stirring for about 10 minutes until the mixture becomes homogeneous and thickens.

3. Cooling the polenta: Once the polenta is ready, set it aside in a cool place, ideally outside if the weather permits. If you want a softer consistency, use 250 g of cornmeal, as I prefer.

4. Preparing the cheese: In a large bowl, mix the cottage cheese with 100 g of salty sheep cheese and sour cream. Add the yolks and mix well until you obtain a uniform composition.

5. Beating the egg whites: In another bowl, beat the egg whites with a pinch of salt until they form stiff peaks. This step will add an airy texture to the alivenci.

6. Combining the ingredients: Incorporate the cooled polenta into the cheese mixture. Mix well, then carefully add the beaten egg whites, using gentle folding motions to avoid losing air from the foam.

7. Preparing the baking dish: Prepare a 20/30 cm baking dish lined with parchment paper. Preheat the oven to 190 degrees Celsius.

8. Pouring the mixture: Pour the mixture into the baking dish, leveling it evenly. On top, sprinkle the remaining 50 g of salty cheese for an intense flavor.

9. Baking: Place the dish in the oven and let it bake for 35-40 minutes, or until the surface becomes golden and appetizing.

10. Serving: Once the alivenci are ready, remove them from the oven and let them cool slightly. They can be served warm, drizzled with sour cream, but they are also delicious when cold. Personally, I love to enjoy them warm, freshly taken out of the oven, when the cheese is still soft and flavorful.

Useful tips

- Ingredients: Use fresh cottage cheese for the best taste. If you can't find sheep cheese, feta cheese is an excellent alternative.
- Texture: Experiment with the amount of cornmeal to achieve the desired consistency. A softer polenta will produce creamier alivenci.
- Flavor: You can add fresh or dried herbs, such as dill or parsley, to the cheese mixture for an extra flavor boost.
- Sweet variant: Although I prefer the savory version, I know there is also a sweet variant of alivenci, which can include sugar and fruits. It's worth a try!

Calories and nutritional benefits

A serving of alivenci contains approximately 300-350 calories, depending on the ingredients used. This dish is rich in protein due to the cheese and eggs, providing an excellent source of energy. It is also a good option for those looking for a hearty and satisfying meal.
