Mushroom Cake
To prepare a sweet bread with mushroom filling, the first essential step is to take care of the dough. In a large bowl, we mix the flour with the dry yeast, ensuring that the ingredients combine evenly. This is the moment when we add the soft margarine, cut into cubes, which will give the dough a fine and rich texture. We continue by adding a fresh egg, which will contribute to the structure of the dough, and finally, we begin to pour in the warm milk.
We mix all the ingredients with a spatula or by hand until we obtain a homogeneous and easily moldable dough. It is important not to rush at this stage, as a well-kneaded dough will rise beautifully. Once the dough is ready, we cover it with a clean towel and let it rise in a warm place, away from drafts, until it doubles in volume, which can take between 30 and 60 minutes, depending on the ambient temperature.
While the dough is rising, we can prepare the filling. We wash the mushrooms and slice them thinly, then sauté them in a non-stick pan together with diced onion. We use a little oil or butter to cook them until the onion becomes translucent, and the mushrooms release their juice and brown slightly. After obtaining a tasty mixture, we let everything cool a bit, then add a beaten egg and breadcrumbs or ground bread. We mix until we have a homogeneous filling.
After the dough has risen, we turn it out onto a floured surface and roll it out with a rolling pin until it reaches a thickness of about 0.5 cm. We evenly spread the mushroom filling over the dough, leaving a few centimeters free at the edges to seal the sweet bread. We carefully roll the dough, making sure not to tear it, just like when making a regular sweet bread, and then we join the ends to seal the filling inside.
The formed sweet bread is placed in a greased baking tray with a little butter or margarine and left to rise for another approximately 30 minutes. This is the ideal time to preheat the oven to 180 degrees Celsius. After the sweet bread has risen, we brush it with a beaten egg to achieve a golden and appetizing crust. The sweet bread is baked in the oven for 30-40 minutes or until it turns golden brown and sounds hollow when tapped.
The final result is a delicious appetizer that not only looks good but remains fluffy and tasty long after it is taken out of the oven. This recipe is perfect for being served both warm and cold, and it will surely impress everyone who tastes it. Enjoy your meal!
