To prepare this delicious baked potato recipe, we start by ensuring we have all the necessary ingredients at hand. It is important to choose quality potatoes, preferably type A or B, which are more suitable for this cooking method. We carefully peel the potatoes, making sure to remove any traces of dirt or impurities. After washing them well under cold running water, we cut them in half; if we have smaller potatoes, we can leave them whole to preserve their juiciness and flavor.

In a large pot, we add enough water to cover the potatoes, along with a teaspoon of salt, which will help season them during boiling. We place the pot over medium heat and wait until the water begins to boil. Once it reaches boiling point, we let the potatoes boil for about 15 minutes. It is important not to overboil them, as we want them to remain firm and not crumble during baking.

After the time is up, we drain the potatoes and let them cool slightly. While they cool, we prepare the ceramic dish. We grease it with butter, ensuring that the entire surface is covered, to prevent the potatoes from sticking and to add a touch of flavor. Meanwhile, we wash the green onion tops, slice them thinly, and prepare them to add among the potatoes.

We arrange the potatoes in the previously prepared dish, generously seasoning with salt, freshly ground pepper, and rosemary, which will add a fresh and Mediterranean flavor to our dish. Now, we can add the sliced green onions, gently mixing to ensure they are evenly distributed among the potatoes. Finally, we sprinkle a mix of quality cheeses, which will melt and form a delicious crust during baking.

We preheat the oven to a medium temperature, around 180-200 degrees Celsius. When the oven is well heated, we place the dish with the potatoes inside and let them bake for 25-30 minutes, or until the potatoes become golden and crispy on the outside. It is important to check on them from time to time to ensure they do not burn.

When they are ready, we take the dish out of the oven and let the potatoes cool for about 5 minutes. This step is essential to allow the flavors to meld together. We serve the warm potatoes as a side dish or as a main course and enjoy every delicious bite. These baked potatoes are a true delight, perfect for any meal!
