Whether you prepare it for a special occasion or simply to indulge yourself, this cake will surely become a favorite.
Preparation time: 30 minutes
Cooling time: 2 hours
Total time: 2 hours and 30 minutes
Servings: 8-10
Ingredients:
- 400 ml water
- 5 tablespoons coffee (preferably freshly ground)
- 3 tablespoons sugar
- 500 ml liquid cream (preferably 35% fat)
- 2 tubs of mascarpone (approx. 500 g)
- 100 g powdered sugar
- 4-5 blackberries (taken out of the freezer 10 minutes before)
- A handful of gooseberries (taken out of the freezer 10 minutes before)
- A handful of pitted cherries (taken out of the freezer 10 minutes before)
- Ladyfingers (enough to form 3 layers)
- Cocoa for decoration
- Sugar stars (optional)
Preparation:
1. Making the coffee: Start by boiling 400 ml of water. When the water is boiling, add the 5 tablespoons of ground coffee and 3 tablespoons of sugar. Let the mixture boil for 2-3 minutes, then turn off the heat. Allow the coffee to settle for a few minutes, then strain it to remove the grounds.
2. Preparing the mascarpone cream: In a large bowl, pour the liquid cream. Use an electric mixer to beat it until it starts to thicken. When the cream becomes a bit denser, add the two tubs of mascarpone and the powdered sugar. Continue mixing until the cream is airy and well combined.
3. Fruits in cream: Here comes the fun part! I chose to separate a quarter of the cream to create a special layer with blackberries. I blended 4-5 blackberries into the reserved cream, achieving a vibrant color and delicious taste. I mixed the rest of the cream with a handful of gooseberries and cherries. You can use your favorite fruits, but make sure they are thawed to integrate better into the cream.
4. Assembling the cake: Prepare a platter and, if you have one, use a removable ring to form the cake. In a wider plate, add the strained coffee, ensuring no grounds remain. Take each ladyfinger and quickly dip it in the coffee, then place it on the platter, covering every space well.
5. Cream layers: After completing the first layer of ladyfingers, add half of the gooseberry cream. Then, place another layer of ladyfingers, this time with the blackberry cream. Continue with a final layer of ladyfingers and finish with the remaining gooseberry cream. If desired, you can save some cream to cover the outside of the cake.
6. Cooling the cake: Refrigerate the cake for about 2 hours. This time is essential to allow the flavors to blend and achieve a perfect texture.
7. Decorating the cake: Once the cake has cooled well, carefully remove the removable ring. Cover the outside of the cake with the remaining cream, smoothing it out. You can decorate with powdered cocoa and sugar stars. A creative idea would be to write a message on the cake using letter-shaped cereals.
8. Serving: The cake is delicious served plain, but you can accompany it with a scoop of ice cream or an extra serving of whipped cream for an indulgent treat.
Useful tips:
- Make sure to use quality coffee, as its flavor will influence the final taste of the cake.
- If you can't find blackberries or gooseberries, you can experiment with other berries like raspberries or strawberries.
- This cake can be prepared a day in advance, tasting even better the next day when the flavors have intensified.
Nutritional benefits:
