Step by step to a perfect result
1. Preparing the dough
Start by combining the flour with the margarine in a large bowl. Use your fingertips to knead the margarine until the mixture resembles fine sand. This technique helps incorporate air and achieve a fluffy dough.
2. Adding wet ingredients
Add the sugar, vanilla sugar, and salt, mixing gently. In another bowl, mix the ammonia with the warm milk. It is important for the ammonia to dissolve completely to prevent a bitter taste. Add this mixture to the dry ingredients along with the egg and yogurt. Mix everything until you obtain an elastic dough.
3. Shaping and baking the islere
On a floured surface, roll out the dough to about 5 mm thick. Use a round cutter or a glass to cut out dough discs. Place the islere on a baking tray lined with parchment paper. Bake in a preheated oven at 180°C (medium heat) for about 20 minutes, or until they turn slightly golden.
4. Preparing the cream
Meanwhile, while the islere are baking, prepare the cream. Beat the room temperature butter with the granulated sugar until the mixture becomes fluffy and homogeneous. This will be the cream that fills the islere, so make sure it is well mixed.
5. Assembling the islere
Once the islere have cooled, take two and fill them with the butter cream. Do this with a knife or spatula, ensuring a generous amount of cream. Over each filled islere, carefully pour the melted chocolate glaze. Let the islere cool at room temperature.
6. Cooling
It is essential to let the islere cool for at least 24 hours, but ideally, you should prepare them 3 days before serving. This waiting time allows the flavors to meld, and the texture to become perfect.
