To prepare these delicious cookies, start by gathering all the necessary ingredients. You will need 300 grams of flour, a teaspoon of baking soda, a pinch of salt, and a mix of spices that may include cinnamon, nutmeg, and ginger for an unforgettable flavor. In a large bowl, combine the dry ingredients: flour, baking soda, salt, and spices. Mix well with a spatula or whisk to ensure the baking soda and salt are evenly distributed throughout the mixture.

In another bowl, add 150 grams of soft butter that has been left at room temperature, along with 200 grams of sugar. Use an electric mixer or spatula to beat the butter with the sugar until the mixture becomes creamy and light in color. This process will add air to the mixture, making the cookies fluffier. Then add 50 grams of honey, which will provide sweetness and moisture to the cookies, and mix well.

Once the honey is fully incorporated, crack two large eggs into the bowl and continue to mix until everything becomes homogeneous. Now it’s time to combine the wet ingredients with the dry ones. Gradually add the dry ingredient mixture into the bowl with the butter and sugar, mixing with a spatula or mixer on low speed until a uniform dough forms.

The dough should have a consistency similar to playdough. If you find it too sticky, you can add a little more flour. Once the dough is ready, shape it into a ball, wrap it in plastic wrap, and refrigerate for an hour; however, if you have time, letting it sit overnight will enhance the flavors.

When you are ready to continue, take the dough out of the fridge and let it soften a bit for about 10 minutes. Sprinkle a clean surface with flour to prevent the dough from sticking. Use a rolling pin to roll out the dough to about 5 mm thick. Use cookie cutters to cut out various shapes from the dough, which you will place on a baking sheet lined with parchment paper.

Preheat the oven to 180 degrees Celsius and bake the cookies for 8-10 minutes. Baking time may vary depending on the thickness of the dough sheet, so it’s good to keep an eye on them. When they are ready, the cookies should be slightly golden at the edges. Let them cool on a rack, and then you can decorate them with icing, melted chocolate, or leave them plain to enjoy with a cup of tea or coffee.
