Turkey and Quince Soup
To prepare a delicious and comforting soup, we start by carefully selecting boneless meat, preferably beef or chicken, which will provide a rich flavor and pleasant texture. In a large pot, we bring the meat to a boil in cold water, making sure to cover it completely. We bring the water to a boiling point, then reduce the heat to let the meat simmer gently. It is important to focus on the foam that forms on the surface of the liquid; it contains impurities and should be removed with a skimmer.
After about 30 minutes, when the meat is nearly cooked and a clear broth has formed, we add the vegetables. The carrot, sliced thinly, will add sweetness and vibrant color, while the quince, sliced, will provide a subtle fragrance and a slightly tangy flavor. These vegetables not only enhance the taste of the soup but also contribute to the nutritional value of the dish.
After adding the carrot and quince, it is time to season with salt. This is essential to highlight the flavors of the ingredients, but we should be careful with the amount to avoid overdoing it. We continue to simmer the soup on low heat, allowing the ingredients to combine harmoniously for 15-20 minutes, until the carrot becomes tender and the meat easily separates from the bone.
