To prepare a delicious sautéed cabbage with sausages, we start by washing the cabbage well. It's important to remove any damaged outer leaves to ensure we use only the good part of the vegetable. After washing the cabbage, we chop it finely, being careful not to leave large pieces, as we want it to cook evenly.

In a large pan, we put a little oil to sauté the onion. The onion adds a sweet taste and a pleasant aroma to our dish. We let it sauté over medium heat, stirring occasionally, until it becomes translucent. Then, we add the sausages cut into slices or cubes, depending on our preferences. The sausages will brown slightly, releasing their flavors and enriching the dish.

After the sausages are browned, we add the grated carrot and diced bell pepper. These vegetables will add extra color and flavor. We continue to sauté the mixture for a few minutes, so the flavors blend perfectly. Then, we start adding the cabbage gradually, a handful or two at a time, stirring constantly. It is important to let each portion of cabbage soften and reduce before adding the next. This process will allow the cabbage to release its juices and develop an intense flavor.

After incorporating all the cabbage, we let the dish simmer in its own juices. If we notice that the mixture becomes too dry, we can add a little water, being careful not to overdo it, as we want to achieve a slightly moist consistency. We season with salt, pepper, and other spices of choice, such as paprika or thyme, to enhance the flavors.

When the cabbage is almost ready, with a soft texture and deep flavor, we transfer everything to an oven-safe dish. We cover it with aluminum foil or a lid to retain moisture. We let the dish bake in the oven at a medium temperature for about 30 minutes. This step will further intensify the flavors and give the dish a slightly browned crust on top. When ready, we serve the sautéed cabbage with sausages alongside a serving of polenta or a slice of fresh bread. This is a comforting meal, full of taste and aromas, perfect for chilly days. Enjoy your meal!
