Total preparation time: 1 hour
Baking time: 30-40 minutes
Number of servings: 12
Ingredients for the base:
- 150 g dark chocolate
- 100 g butter (leave at room temperature to soften)
- 100 g sugar
- Zest of one orange
- Juice of one lemon
- 5 eggs (separate yolks from whites)
- A pinch of salt
- 100 g nuts (finely ground)
- 100 g flour
- 2 teaspoons baking powder
- 1 teaspoon coffee powder
- Rum essence
- 1-2 tablespoons cognac
Ingredients for the glaze:
- 200 g chocolate (100 g milk chocolate, 100 g dark chocolate)
- 200 ml cream
- 2 tablespoons cognac
Preparation:
Step 1: Prepare the nuts
Start by grinding the nuts. You can use a coffee grinder for a fine texture or crush them with a hammer for a more rustic texture. These nuts will add a delicious flavor and a crunchy texture to the cake.
Step 2: Prepare the mixture
Separate the yolks from the whites. In a large bowl, beat the yolks with a pinch of salt. Gradually add the sugar and mix until completely dissolved, achieving a creamy mixture.
Step 3: Beat the egg whites
In another bowl, beat the cold egg whites from the fridge with a pinch of salt and a little lemon juice until they form firm peaks. This is an essential step that will give the cake an airy texture.
Step 4: Melt the chocolate
Break the dark chocolate into pieces and melt it in a double boiler, stirring constantly to prevent burning. Once melted, let it cool slightly.
Step 5: Assemble
Cream the soft butter well and add it to the yolk mixture, mixing continuously. Pour the melted chocolate into this mixture. Sift the flour with the baking powder twice to avoid lumps. Add the coffee powder, ground nuts, orange zest, rum essence, and cognac. Mix well.
Step 6: Incorporate the egg whites
Gradually add a spoonful of the beaten egg whites and a spoonful of flour, gently folding from the bottom up. This process will maintain the air in the egg whites, giving the cake a fluffy texture.
Step 7: Bake
Line a cake pan with parchment paper and pour in the mixture. Preheat the oven to 160°C (low heat) and bake the cake for 30-40 minutes. Check if it’s done with a toothpick; it should come out clean, except for the edges which may be slightly softer.
Step 8: Cool
Once the cake is baked, leave it in the oven with the door ajar to cool gradually, preventing the base from sinking.
Step 9: Glaze
For the glaze, melt the milk chocolate and dark chocolate together with the cream, stirring constantly. Add the cognac and mix well. Pour the glaze over the cooled cake and let it set.
Step 10: Decorate
For an elegant look, you can create circles from white chocolate to place on top of the cake. This detail will add a sophisticated touch to your dessert.
Serving suggestion: Serve the cake alongside a scoop of cream and a slice of orange for a contrast of flavors.
This 'Ka Snake' cake recipe is not only a quick dessert but also a culinary experience you'll want to repeat with joy. Enjoy every moment and take pride in your success in the kitchen!
