1. Preheat the oven to 200°C.

3. Roll the long edges of the sheet towards the center from both sides, so you get two logs that meet in the middle. This will create the classic palmier shape.
4. Cut slices about 0.5 cm thick. Don’t make them too thin, or they will fall apart.
5. Roll each slice in sugar on both sides. If you want them to be more caramelized, you can use brown sugar here.
6. Place the slices on a baking tray, leaving space between them. Don’t stack them on top of each other, as they will puff up while baking.
