Ingredients for the dough:
- 190 g powdered sugar
- 125 ml water
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 500 g flour
- a pinch of baking soda
- 1 egg + 1 yolk
- 50 g soft butter

Ingredients for the icing:
- 1 egg white
- a pinch of salt
- 100 g sugar
- 2 tablespoons hot water

Step 1: Preparing the oven and caramel
Start by preheating the oven to 180°C. This is a crucial step, as a well-heated oven will ensure even baking of the gingerbread.

In a small saucepan, caramelize a tablespoon of powdered sugar. Watch carefully, as the caramel can burn quickly. Once the sugar has melted and turned a golden color, carefully add 125 ml of water. Stir well until all the caramel dissolves and forms a smooth syrup.

Step 2: Preparing the dough
Transfer the syrup to a large pot and add the remaining powdered sugar, cinnamon, ginger, and 150 g of flour. Mix well to obtain a uniform mixture.

Now it’s time to add the baking soda, egg, yolk, and soft butter. Gradually add the remaining flour and knead the dough until it becomes elastic and non-sticky. If it sticks to your hands, you can add a little more flour, but be careful not to overdo it, as this can make the dough heavy.

Step 3: Shaping the gingerbreads
Divide the dough into smaller pieces and form balls. Place them on a greased baking tray lined with parchment paper, making sure to leave enough space between them to expand during baking.

Step 4: Baking
Place the tray in the preheated oven and bake for 15-20 minutes or until the gingerbreads pass the toothpick test. This test is simple: insert a toothpick into the center of a gingerbread; if it comes out clean, the gingerbreads are ready.

Step 5: Preparing the icing
