When it comes to foods that bring a smile to your face, Laugenbrot buns are definitely at the top of the list. These golden rolls, with a crispy crust and a fluffy interior, are a perfect choice for a savory breakfast or a delicious appetizer. I was inspired by the recipes of my friends, Ancuta and Laura Adamache, and today I will share with you this easy-to-follow recipe that yields spectacular results.
Preparation time: 15 minutes
Rising time: 40 minutes
Boiling time: 10 minutes
Baking time: 20-25 minutes
Total: Approximately 1 hour and 30 minutes
Number of servings: 15 buns
Ingredients
- 500 g white flour
- 1 cube of fresh yeast (approximately 25 g)
- 1 teaspoon salt
- 1 teaspoon sugar
- 270 ml warm water (approximately 37°C)
- 4-5 tablespoons oil (olive or sunflower)
- 2 l water (for boiling)
- 10 teaspoons baking soda
- 4 teaspoons salt (for boiling water)
- For decoration: sea salt and sesame seeds
Preparation Technique
1. Activating the yeast: Start by dissolving the fresh yeast in 270 ml of warm water mixed with 1 teaspoon of sugar. Let the mixture sit for about 10 minutes until it becomes frothy. This step is essential as it ensures optimal rising of the dough.
2. Preparing the dough: In a large bowl, sift 500 g of white flour and add 1 teaspoon of salt. Make a well in the center of the flour and pour in the activated yeast. Gradually add the remaining warm water and the 4-5 tablespoons of oil. Start mixing with a wooden spoon, then continue with your hands to knead the dough until it becomes elastic and no longer sticks to your fingers (about 5-10 minutes).
3. Rising the dough: Cover the bowl with a clean towel or plastic wrap and let it rise in a warm place for about 40 minutes or until the dough doubles in size.
4. Shaping the buns: Once the dough has risen, oil your hands lightly and form 15 balls of about 50 g each. Place them on a baking tray lined with parchment paper, leaving enough space between them to rise.
5. Boiling the buns: In a large pot, add 2 l of water, 4 teaspoons of salt, and 10 teaspoons of baking soda. Bring the water to a boil. When the water starts boiling, add 5 buns at a time and let them boil for about 30 seconds. This boiling process will give them a crispy crust.
6. Baking the buns: Remove the buns with a slotted spoon and place them immediately on the prepared tray. Use a sharp knife to make a small cut on top of each bun. Sprinkle sea salt and sesame seeds on each bun. Preheat the oven to 200°C and bake the buns for 20-25 minutes or until they are golden and crispy.
7. Cooling: Remove the buns from the oven and place them on a clean towel to cool. This step will help them stay fluffy.
