To prepare a delicious lasagna with bolognese sauce and béchamel sauce, we will start by creating all the essential components, including homemade cheese and lasagna sheets. It is a recipe that requires a little time, but the final result will be worth every minute spent in the kitchen.

We begin by preparing the lasagna sheets. We mix the flour with the eggs and a pinch of salt, kneading well until we obtain an elastic dough. We let it rest for 30 minutes, then roll it out into thin sheets, cutting them to the size of the baking tray. These lasagna sheets will provide a unique texture to our dish, and the fact that they are homemade will certainly elevate their taste.

In a tall pan, we add the oil and then the grated carrot, along with the diced onion. We sauté them over medium heat, stirring frequently, until they become golden and fragrant. Then, we add the pepper paste and ground beef, stirring continuously to prevent sticking. We drizzle a little water to help cook the meat, stirring until it cooks evenly. After about 10 minutes, when the meat changes color, we add the tomato paste and let the mixture simmer for 30 minutes. It is important to monitor the sauce so it does not burn, and in the end, it should be well combined and flavorful.

Meanwhile, we take care of the béchamel sauce. In a saucepan, we melt the butter over low heat, add the flour and let it brown slightly, making sure it does not change color. Gradually, we start adding the milk, whisking vigorously to avoid lumps. We continue to stir until the sauce thickens, then season it with salt and pepper to taste.

Assembling the lasagna begins by greasing the tray with a thin layer of béchamel sauce to prevent the sheets from sticking. We then place two lasagna sheets, followed by a layer of béchamel sauce, a layer of bolognese sauce, a few pieces of telemea cheese, and grated cheese. We continue to repeat this process, layering the sheets and sauces until we have used all the ingredients, making sure to leave a layer of sheets on top. Finally, we sprinkle a generous layer of grated cheese to achieve a golden and crispy crust.

We place the tray in the preheated oven and bake for 45-50 minutes, or until the surface is beautifully browned. Lasagna can be served hot or cold, and cutting it cold will yield prettier portions. This lasagna recipe is perfect for a family meal or to impress guests with a delicious dish made with love and patience.

 Ingredients: For the Bolognese sauce: -1 kg minced beef, -1 l broth, -2 tablespoons pepper paste (made at home with onion and tomatoes), -100 ml water, -4 tablespoons oil, -2 carrots, -2 onions, -3 cloves of garlic -salt, pepper, rosemary, thyme. For the béchamel sauce: -700 ml milk, -70 gr flour, -100 gr butter, -salt, pepper, herbs (thyme, coriander, finely ground rosemary through a grinder). For assembly: -250 gr slightly salted cow cheese, -200 gr cheese, -lasagna sheets.
