Ingredients:
- 500 g all-purpose flour
- 7 g dry yeast or 25 g fresh yeast
- 100 g sugar (you can adjust to taste)
- 300 g natural yogurt
- 200 ml warm milk
- 2 large apples (preferably sweet-tart varieties)
- 2 eggs
- 100 ml sunflower oil
- 1 packet of vanilla extract
- A pinch of salt
- Cinnamon (optional, but recommended)
Preparation:
1. Start by activating the yeast. If using fresh yeast, dissolve 25 g of yeast in a small bowl with 100 ml of warm milk and a teaspoon of sugar. Let the mixture sit for 10 minutes until it becomes frothy. If using dry yeast, add it directly to the flour.
2. In a large bowl, sift 500 g of flour and add 100 g of sugar, a pinch of salt, and, if desired, a little cinnamon for extra flavor. Make a well in the center of the flour and pour in the yeast mixture, yogurt, sunflower oil, beaten eggs, and vanilla extract.
3. Mix the ingredients with a spatula or your hands until you obtain a homogeneous dough. It should be soft and slightly sticky. Cover the bowl with a clean towel and let the dough rise in a warm place for 30 minutes, until it doubles in volume.
4. While the dough rises, prepare the apples. Peel them, remove the core, and cut them into small cubes. You can add a splash of lemon juice to prevent browning.
5. After the dough has risen, add the apple cubes and gently mix to incorporate them. Preheat the oven to 180°C.
6. Prepare a muffin tin by greasing it with a little oil or using paper liners. Fill each compartment with dough, leaving a little space at the top to allow the muffins to rise.
7. Bake the muffins for 25-30 minutes, until they are golden and pass the toothpick test – it should come out clean.
8. Once the muffins are baked, let them cool on a rack. These apple and yogurt muffins are delicious both warm and at room temperature.
