To prepare a delicious stuffed zucchini dish, the first step is to ensure you have all the necessary ingredients at hand. We start with the zucchinis, which should be washed well under clean water, then cut in half lengthwise. They will be the perfect containers for the filling we will prepare.

In a frying pan, add a tablespoon of oil and sauté the finely chopped onion along with the grated carrot. Heat them over medium heat, stirring constantly, for a few minutes until the onion becomes translucent and the carrot softens. This vegetable base will add a savory flavor to the filling.

Meanwhile, take the rice and wash it in several waters until the water runs clear. This step is essential to remove excess starch that could make the rice sticky. After washing, let it soak in hot water for about 10 minutes. Then, combine the rice with the onion and carrot mixture, adding minced beef or pork, depending on your preference. Season with salt and pepper to taste, then add fresh herbs like parsley or dill for extra flavor.

Once you have prepared the filling, scoop out the center of the zucchinis using a spoon or a knife, being careful not to damage their walls. Fill each half of the zucchini with the meat and rice mixture, pressing gently to compact the filling. Place the stuffed zucchinis in a greased baking dish, then dilute the tomato juice with a cup of water and pour it evenly over the zucchinis.

Now, cover the dish with aluminum foil and place it in a preheated oven at 180 degrees Celsius. Let the zucchinis bake for 30 minutes over medium heat, then remove the foil to allow a delicious crust to form. Bake them for another 30-40 minutes, basting occasionally with the sauce from the dish to prevent drying out.

Once they are ready, take them out of the oven and let them cool slightly before serving. The stuffed zucchinis are perfect for a family meal and can be accompanied by sour cream, which will add a creamy and delicious touch.
