Muffins with Cheese, Potato Flakes and Ham Filling
To prepare this delicious recipe, start by carefully mixing the flour with the potato flakes to achieve a fine and airy texture. Add the sour cream, half of the grated cheese, the fresh egg, sunflower oil, and finally, the yeast that has been dissolved in lukewarm milk. The milk should be lukewarm, not hot, to avoid destroying the yeast. Mix all the ingredients until you obtain a homogeneous and elastic dough. Cover the bowl with a clean towel and let it rise in a warm place, away from drafts, until it doubles in volume. This is an essential step as the yeast will act and make the dough fluffy.
While the dough is rising, you can prepare the filling. Heat a pan over medium heat and add the butter. When it has melted, add the finely chopped onion and let it sauté until it becomes translucent and fragrant. Then, add the diced smoked meat, which will give the filling a special flavor. Season the mixture with a little mustard, pepper, and salt, letting everything fry for a few minutes so that the flavors blend perfectly. When ready, remove the pan from the heat, add the sour cream, and mix well to obtain a creamy and tasty filling. Let it cool slightly.
After the dough has risen, prepare the baking molds. You can use muffin molds or small trays, which you grease with butter or line with baking paper to prevent sticking. Fill each mold with dough up to halfway, then make a small indentation in the middle of each portion, where you will add the prepared filling. Cover the indentations with dough, filling the molds up to 3/4 of their height. Don't forget to sprinkle the remaining grated cheese on top, which will melt and form a golden and appetizing crust.
Leave the filled molds in a warm place for another 15-20 minutes to allow the dough to rise again. This step will make the final products extremely fluffy. Meanwhile, preheat the oven to 200 degrees Celsius. Once the oven has reached the desired temperature, place the tray in the oven for the first 5 minutes at 200 degrees, then reduce the temperature to 150 degrees and let them bake for an additional 15-20 minutes until they become nicely browned. When ready, carefully remove them from the oven and let them cool slightly before taking them out of the molds. These delicious treats will be perfect to serve warm, alongside a fresh salad or as an appetizer at a festive meal. Enjoy the final result of your work with family and friends!
