To prepare a delight that will please the taste buds, we start by preparing the necessary ingredients. We need a medium onion, which will add flavor to our dish. We chop it finely to release its aromas. Alternatively, if you want a finer texture, you can use a food processor, which will turn the onion into a delicious paste.

In a heated skillet, we add a splash of olive oil or butter, then add the chopped onion to sauté. It is important to stir it constantly, so it doesn’t burn, but rather becomes translucent and releases its inviting aroma. We then add our favorite spices: a pinch of salt, pepper, sweet or hot paprika, and maybe even a dash of cumin, depending on personal taste. These spices will enhance the flavor and give the dish a special note.

Meanwhile, we take care of the mushrooms. Choose fresh mushrooms, such as champignon or porcini, which we clean well under a stream of cold water, then boil them for a few minutes in salted water. After boiling, we drain them and chop them finely to add to the sautéed onion mixture.

In a separate bowl, we crack a few eggs (usually, 2-3 eggs are enough) and beat them well with a whisk until they become homogeneous. We then add the prepared mushrooms and the sautéed onion mixture, mixing everything carefully. Finally, we gradually incorporate the flour until we obtain a homogeneous composition that has a consistency slightly thicker than pancake batter.

We now prepare the baking dish, greasing it with butter or oil and dusting it with flour to prevent sticking. We pour the mixture of eggs, mushrooms, and onion into the prepared dish, leveling the surface with a spatula. We preheat the oven to 180 degrees Celsius and place the dish inside, allowing it to bake for about 30-40 minutes. It is ready when the edges turn golden and a nice crust forms.

Finally, let the dish cool slightly before cutting it. Serve it warm or at room temperature, alongside a fresh salad or a side of vegetables. This dish is perfect for a family meal or a gathering with friends. Enjoy your meal!
