Ingredients:
- 2 medium zucchinis (approx. 400g)
- 1 medium carrot
- 3-4 cloves of garlic
- 2 eggs
- A bunch of fresh dill (or a tablespoon of dried dill)
- A little fresh parsley
- 5-6 tablespoons of breadcrumbs
- Salt, pepper, and fritter seasoning to taste
Step 1: Preparing the zucchinis
The first step is to prepare the zucchinis. Wash them well under cold running water, then peel them. Use a large grater to grate them. This step is essential because zucchinis contain a lot of water, and if you don’t drain them well, the fritters will be too wet. After you are done, place the zucchinis in a sieve and press them with your hand or a spoon to remove the excess juice. Let them drain for 10-15 minutes.
Step 2: Preparing the vegetables
In addition to zucchinis, we will also use a carrot for extra flavor and color. Peel the carrot and grate it. Also, peel the garlic and crush or finely chop it. In a large bowl, combine the drained zucchinis, carrot, and garlic.
Step 3: Mixing the ingredients
Add the eggs to the bowl with the vegetables. They will help bind the fritters. Finely chop the dill and parsley, then add them to the mixture. To bind the mixture, gradually add the breadcrumbs while continuously stirring until you achieve a homogeneous composition, but not too dry. Season with salt, pepper, and fritter seasoning to taste. These spices will add extra flavor and make the fritters more interesting.
Step 4: Forming the fritters
With wet hands, form the fritters from the mixture obtained. You can make small fritters for easier serving, or larger ones, depending on your preferences. Make sure to shape them well so they don’t fall apart during cooking.
Step 5: Frying the fritters
In a deep frying pan, heat the oil over medium heat. When the oil is hot, carefully add the fritters, being careful not to overcrowd them. Fry them for about 3-4 minutes on each side until they become golden and crispy. You can check if they are ready with a simple test: if they are browned and crispy on the outside, they are perfectly cooked.
Step 6: Serving and variations
Once the fritters are ready, remove them to an absorbent paper towel to eliminate excess oil. Serve them hot, alongside a fresh salad or with a garlic yogurt sauce. For a personal touch, you can add a squeeze of lemon juice over the fritters before serving.
Possible variations:
If you want to experiment, you can add other vegetables to the mixture, such as bell peppers or green onions. You can also replace the breadcrumbs with almond flour for a gluten-free version.
