Chicken biryani is a recipe that combines the rich flavors of Eastern spices with the perfect texture of basmati rice. This culinary specialty, found in India and many parts of the Middle East, is a true feast for the senses. Whether you are celebrating a special occasion or simply want to impress your family with a delicious dish, chicken biryani is sure to become a favorite.
Ingredients:
- 500 g chicken breast (or thighs, as preferred), cut into cubes
- 300 g basmati rice
- 2 large onions, julienned
- 3 cloves of garlic, finely chopped
- 1 piece of ginger (about 2 cm), grated
- 2 medium tomatoes, chopped
- 200 g plain yogurt (preferably Greek)
- 1/2 cup vegetable oil or ghee
- 1 tablespoon curry paste or 2 tablespoons biryani spices
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/2 teaspoon cinnamon
- 4 cloves
- 2-3 cardamom pods
- Salt and pepper to taste
- Fresh coriander and mint leaves for garnish
Instructions:
1. Preparing the rice: Start by rinsing the basmati rice under cold water until the water runs clear, to remove the starch. This step is essential for achieving non-sticky rice. Soak the rice in cold water for 30 minutes.
2. Cooking the chicken: In a large pan, heat the oil or ghee over medium heat. Add the sliced onion and sauté until golden. This step will add a deep flavor to the dish. Add the garlic and ginger and cook for another minute, stirring constantly.
3. Adding the spices: Add the chicken cubes to the pan and brown them until golden. Now it’s time to add the curry paste or biryani spices, turmeric, cumin, cinnamon, cloves, and cardamom. Mix well to coat the chicken with all the flavors.
4. Adding the tomatoes and yogurt: Once the chicken is browned, add the chopped tomatoes and cook until softened. Then, reduce the heat and incorporate the yogurt, mixing well. This ingredient will add delicious creaminess and help tenderize the chicken.
5. Preparing the rice: In a separate pot, add water (about 600 ml) and salt. Once the water has started to boil, add the drained rice. Cook the rice for 5-7 minutes until al dente, then drain.
6. Assembling the biryani: In a large pot or baking dish, combine the chicken mixture with the cooked rice. Gently mix to avoid breaking the rice. Cover with a lid or aluminum foil.
7. Final cooking: Place the dish in a preheated oven at 180°C for 25-30 minutes. This step will allow the flavors to combine perfectly.
8. Serving: Once the biryani is ready, let it sit for 10 minutes before serving. Garnish with fresh coriander and mint leaves for a vibrant look and refreshing aroma.
Practical tips:
- You can add vegetables like carrots or peas for a vegetarian version.
- If you prefer a spicier taste, you can add chopped green chili.
- By trying different types of meat, such as lamb or fish, you can vary the recipe.
- Biryani pairs perfectly with a refreshing cucumber salad or a mint yogurt raita.
