To prepare a delicious sushi with rice and vegetables, we will start by ensuring we have all the necessary ingredients and utensils ready. In a pot, we add one part rice and two parts water, carefully following the rice boiling technique. It is important to wash the rice beforehand to remove excess starch, which will help achieve a perfect texture. After adding the rice to the water, we bring it to a boil and then reduce the heat, covering the pot with a lid to allow the rice to absorb the water evenly.

While the rice is boiling, we will prepare a rice vinegar that will give that characteristic taste. In a small saucepan, we pour 50 ml of rice vinegar and add a teaspoon of salt and a tablespoon of sugar. We mix the ingredients and bring them to a boil, being careful to stir constantly. It is essential not to let the sauce boil too long, just until the sugar and salt dissolve completely, achieving a slightly syrupy consistency.

Once the rice is cooked, we strain it and let it cool slightly before adding the vinegar sauce. We mix well to ensure that each grain of rice is evenly coated. After finishing, we spread the rice on a bamboo mat that has been sprinkled with finely chopped green dill. If we do not have a bamboo mat, we can use aluminum foil, making sure to lightly grease it to prevent sticking.

Now comes the creative part: we can choose our favorite vegetables, such as cucumbers, carrots, or avocados, cut into thin strips. We lay them evenly over the rice, being careful not to overdo the amount, as we will roll everything later. Rolling is done carefully, starting from one corner and continuing until we reach the end, ensuring that the vegetables stay well wrapped.

After obtaining a uniform roll, we use a very sharp knife, which we moisten in water, to cut the sushi into slices of about 2-3 cm. These will be easier to serve and consume. The sliced pieces are beautifully arranged on a platter, and for an extra flavor boost, we can serve them alongside soy sauce, which will perfectly complement the flavors of our dish. This rice and vegetable sushi is not only tasty but also a true visual delight, perfect for any occasion.
