Snowy cookies
To prepare a delicious chocolate cake, you need a few essential ingredients and a little patience. We start by melting good quality chocolate, preferably with a cocoa content of at least 70%, along with soft butter cut into cubes. It is important that the mixture is not hot, so I recommend letting the chocolate cool a bit after melting it. You can use either the bain-marie method or a microwave, making sure to stir occasionally to achieve a fine and homogeneous mixture.
Once the chocolate and butter are perfectly combined, add the sugar and mix well until the sugar starts to dissolve. Now is the time to incorporate the eggs, one at a time, mixing vigorously after each to fully integrate them into the mixture. The eggs will help aerate the dough, giving it a fluffy texture.
In another bowl, sift the flour together with the salt and baking powder to prevent lumps from forming. This dry mixture will be gradually added over the chocolate mixture, stirring with a spatula or whisk to avoid losing air in the dough. The combination should be homogeneous, but do not overmix to avoid ruining the final texture of the cookies.
After obtaining a fine dough, cover the bowl with plastic wrap and refrigerate for 1-2 hours. This step is essential as it will allow the mixture to firm up, making it easier to form dough balls. After cooling, take the dough out of the fridge and form balls the size of a walnut.
Each ball will be rolled in powdered sugar, which will create a delicious crust during baking. Preheat the oven to a moderate temperature, about 180 degrees Celsius, and place the balls on a baking sheet lined with parchment paper, leaving enough space between them to expand during baking. Bake the cookies for about 10 minutes, until the edges become slightly crispy while the inside remains soft and fudgy.
After taking them out of the oven, let them cool for a few minutes on the tray, then transfer them to a cooling rack. These chocolate cookies will be a real treat, perfect for special occasions or simply to indulge yourself. Enjoy them with a cup of coffee or tea!
