Stracciatella Cake Socrella
Stracciatella Socrella Cake: A Delight for Your Mother-in-Law
Welcome to the world of culinary delights! Today, I will present you with the recipe for a special cake, created with much love for my mother-in-law, which I named "Socrella." This cake combines the enticing flavors of vanilla and chocolate, inspired by the unmistakable taste of Stracciatella ice cream. Whether it’s for a celebration or just a family gathering, this cake will bring a smile to the faces of your loved ones.
Preparation time: 30 minutes
Cooling time: 1 hour
Baking time: 30 minutes (if you choose to make the base at home)
Number of servings: 10
Ingredients you will need:
For the cake base:
- 1 cocoa cake base (or 3 separate layers of cocoa sponge)
- 50 ml water
- 3 tablespoons brown sugar
- 1 teaspoon vanilla extract
For the delicious cream:
- 2 tubs of mascarpone (about 500 g)
- 1 small tub of liquid cream (Hulala) (about 250 ml)
- 3 tablespoons brown sugar
- 2 tablespoons powdered sugar
- 30 g unsalted butter
- 100 g coconut flakes
- 2 vials of vanilla extract
For the chocolate:
- 100 g dark truffle chocolate (Katy)
- 100 g caramel chocolate (Heidi)
- 100 g plain dark chocolate (Lindt)
- 100 g milk chocolate with cereals (Primola)
- 1 tablespoon strawberry jam (optional, for decoration)
Step-by-step instructions:
1. Prepare the base: If you choose to make the base at home, you can use a classic sponge cake recipe, adding cocoa to the mixture. Bake it in a round, removable-bottom pan at 180°C for about 30 minutes or until it passes the toothpick test. If you prefer, you can buy a pre-made cake base.
2. Prepare the syrup: In a small pot, combine the water, brown sugar, and vanilla extract. Heat the mixture over low heat until the sugar dissolves completely. Set it aside to cool.
3. The delicious cream: In a large bowl, add the liquid cream, the two tubs of mascarpone, brown sugar, powdered sugar, butter, and coconut flakes. Use an electric mixer on high speed to mix the ingredients for one minute. The cream should become fluffy and smooth. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
4. Melt the chocolate: In a Bain-Marie, add the caramel chocolate and plain dark chocolate. Add one vial of vanilla extract, ½ teaspoon of butter, and 2 tablespoons of water. Stir constantly until completely melted. If you want a thinner chocolate, you can add a little more water.
5. Assemble the cake: Once the base has cooled, cut it into two or three layers, depending on your preference. Place the first layer on a platter, soak it with the prepared syrup, then spread some of the mascarpone cream. Add the dark truffle chocolate pieces, cut into small cubes, over the cream. Continue to add layers, alternating between base, syrup, cream, and chocolate.
6. Decorate: The last layer should be the mascarpone cream. Pour the melted chocolate over the cake and smooth it out with a spatula. Decorate with shavings of white and dark chocolate, as well as a few drops of strawberry jam for an elegant and appetizing look.
7. Chill and serve: Let the cake chill in the refrigerator for at least 2 hours. This will allow the flavors to meld together and make the cake easier to cut.
Serving suggestions: The cake pairs perfectly with a scoop of vanilla ice cream or a glass of sweet wine. You can accompany each slice with a cup of aromatic tea or a strong espresso to contrast with the sweetness of the cake.
Nutritional benefits: This Stracciatella cake is not only delicious but also a source of energy thanks to the chocolate and mascarpone. Dark chocolate provides antioxidants, while mascarpone offers calcium and protein. Coconut flakes are a good source of healthy fats and fiber.
