Preheat the oven to 180 degrees Celsius. This is the essential step to ensure even baking of the cake. In a large bowl, start mixing the yogurt, gradually adding the sugar so that it melts completely. The oil, lemon juice, and zest will provide a fresh and aromatic taste, so make sure to incorporate them well into the mixture. It is important that the ingredients are at room temperature to achieve a smooth texture.

Once the mixture becomes homogeneous, add the salt and, if desired, the lemon essence for an even more intense flavor. At this stage, introduce the eggs one by one, ensuring that each egg is well incorporated before adding the next. This will help aerate the mixture and achieve a fluffy texture.

In another bowl, mix the sifted flour with the baking powder and coconut. This combination will give the cake a rich flavor and an interesting texture. Start incorporating the dry mixture into the wet one, adding it gradually. It is crucial to mix vigorously but carefully to avoid lumps. The final composition should be quite soft but well bound.

Prepare a loaf pan lined with parchment paper so that the cake releases more easily after baking. Pour the mixture into the pan, leveling the surface with a spatula. Evenly sprinkle the raisins or dried fruits, cut into small pieces, over the batter to add sweetness and texture.

Place the pan in the preheated oven and bake for about 40-45 minutes. It is essential to check if the cake is baked by performing the toothpick test: insert a toothpick in the middle of the cake; if it comes out clean, it is ready. Once the cake has been removed from the oven, let it cool on a rack. For an extra flavor boost, dust it immediately with powdered sugar.

Allow the cake to cool completely before slicing it. This recipe provides a perfect treat for a snack, breakfast, or a savory dessert. Enjoy each slice, which will bring a smile to the faces of your loved ones.
