- 2 tablespoons tomato paste
- Salt and pepper to taste
- 1 teaspoon dried thyme (optional)
- Fresh parsley for garnish

Step 1: Preparing the mushrooms
Start by washing the mushrooms under cold running water, ensuring to remove any impurities. Cut them in half or quarters, depending on their size. It's important to cut them larger to maintain their texture and flavor.

Step 2: Blanching the mushrooms
Put a pot of water to boil, add a teaspoon of salt, and when the water is boiling, add the mushrooms. Let them boil for 2-3 minutes. This process will help remove any bitter tastes and make the mushrooms easier to digest. After that, drain them and set aside.

Step 3: Preparing the vegetables
Peel the onions and carrots, then chop the onion finely and cut the carrots into small cubes or rounds. Crush or finely chop the garlic. These vegetables will add a special flavor to your stew.
