Green salad soup is a delicious dish, perfect for hot summer days when we crave something light, healthy, and refreshing. This recipe, full of fresh flavors, combines the crunchy texture of the salad with the richness of eggs and bacon, offering a delightful contrast. Additionally, it is an excellent way to make use of fresh ingredients from the garden.

The history of green salad soup dates back to our grandparents' time, when the simplicity and naturalness of ingredients were commonplace. This dish reflects the beauty of summer and can be adapted according to individual preferences, making it an ideal choice for family meals or outdoor picnics.

Our ingredients:

- 2 pieces of green salad (mine were larger, but you can also opt for smaller salad)
- 100 g bacon (thinly sliced)
- 500 g yogurt (choose a creamy yogurt for a better texture)
- 200 g sour cream (you can use fermented sour cream for a more complex taste)
- 3 eggs (preferably organic, for a more authentic taste)
- 2 tablespoons of flour (use white or whole wheat flour, depending on preference)
- 2-3 cloves of garlic (helps flavor the soup)
- A bunch of fresh dill (for a fresh and invigorating taste)
- Oil for frying

Preparing the green salad soup:

Step 1: Washing and cutting the green salad
Start by washing the two pieces of green salad well under cold running water to remove any impurities. Cut the salad into small pieces, about 2-3 cm, and place it in a pot of boiling water. Let it boil for 5-7 minutes until it becomes tender.

Step 2: Preparing the omelet
In the meantime, crack the three eggs into a bowl and beat them well with a pinch of salt. In a frying pan, add a little oil and place it over medium heat. Pour in the egg mixture and cook until a beautiful golden omelet forms. Once ready, remove the omelet onto a plate and cut it into small pieces.

Step 3: Frying the bacon
In the same frying pan, add a few slices of bacon and fry them until they become crispy and golden. This will add a delicious flavor to your soup. Once the bacon is ready, set it aside.

Step 4: Preparing the dressing
In a medium bowl, mix the flour with yogurt, sour cream, and an egg yolk. Blend the mixture well until no lumps remain. This will bring a special creaminess to the soup.

Step 5: Combining the ingredients
Once the green salad has boiled, add the pieces of omelet and the fried bacon to the pot. Let everything simmer together for 3-5 minutes to combine the flavors. Then, take a spoonful of the soup and pour it over the dressing prepared earlier, mixing well. This step will prevent the dressing from coagulating when added to the soup.

Step 6: Finalizing the soup
Pour the blended dressing into the soup pot and mix well. Let the soup come to a boil, then remove it from the heat. Finally, crush the garlic and finely chop the fresh dill, adding them to the soup. These will add a special taste and fresh aroma.

Step 7: Serving
Green salad soup is delicious both warm and cold. You can serve it with crunchy croutons or a slice of fresh bread, and for an extra touch of freshness, add a few dill leaves on top.

Useful tips:

1. If you prefer a vegetarian version, you can omit the bacon and add fresh vegetables, such as cherry tomatoes or diced cucumbers, for added texture.
2. Substitute yogurt with a plant-based yogurt if you want a vegan option.
3. You can experiment with different types of greens, such as parsley or basil, instead of dill.

Frequently asked questions:

1. How long can I keep green salad soup?
The soup can be stored in the refrigerator for 1-2 days, but it is recommended to consume it fresh to enjoy the best flavors.

2. Can I add other vegetables to the soup?
Certainly! You can add grated carrots or zucchini for additional texture and a boost of nutrients.

3. What drinks can be paired with it?
Green salad soup pairs wonderfully with a glass of cold lemonade or mint tea, which perfectly complements the fresh flavor of the dish.

Nutritional benefits:

This soup is rich in vitamins and minerals, thanks to the green salad and fresh ingredients. Green salad contains vitamin K, vitamin A, and folic acid, while yogurt and sour cream provide protein and calcium. Additionally, garlic is known for its antibacterial and anti-inflammatory properties.
