Today, I want to share with you my favorite recipe for preparing grape leaves for winter, a tradition I honor every year.

- Grape leaves (preferably Russian vine or 1001 variety) - variable amount, depending on your needs.
- 2 liters of water
- 1 cup of coarse salt (sea salt is ideal)
- Jars with screw caps, 720 ml

Recipe history

Grape leaves have been used for centuries in various cultures, appreciated not only for their taste but also for the versatility they offer in cooking. The origin of this healthy ingredient is lost in the mists of time, but today, they are a staple in many families' kitchens. Preparing them for winter is a tradition that connects us to our grandparents and great-grandparents, transforming into a family ritual full of memories and beautiful stories.

Preparing grape leaves

1. Harvesting the leaves: Choose grape leaves at the end of May when they are tender and full of flavor. Make sure to select Russian vine leaves, which have a fine texture and thin veins, as these will be less likely to tear when rolling.

2. Boiling the brine: In a large container, add 2 liters of water and a cup of coarse salt. Boil the mixture, ensuring that the salt dissolves completely. Test the brine to make sure it is salty enough: a raw egg should float on top.

3. Blanching the leaves: Take a bunch of leaves and dip it into the boiling brine for 5 seconds. This step will help soften the leaves and make them easier to roll. Quickly remove them into a bowl, being careful not to leave them in the water too long.

4. Preparing for rolling: Place the blanched leaves on top of each other, 10-12 at a time, in the same direction. Follow the main vein of the leaves and fold them carefully. Roll the leaves starting from the petiole area, forming tight rolls.

5. Filling the jars: Place the rolls of leaves in jars, ensuring they are packed tightly to avoid empty spaces. About 10-12 rolls fit in a 720 ml jar, so you can get around 120 grape leaves.

6. Adding the brine: Pour the brine you used to blanch the leaves over the rolls, ensuring they are completely covered. This step is essential for their long-term preservation.

7. Sealing the jars: Cover the mouth of the jar with plastic wrap and then screw on the lids, which you should have previously placed in a pot of boiling water to ensure a better seal.

Practical tips

- Attention to leaves: Always choose smooth, unblemished leaves, as these will affect the taste and final appearance.
- Jar maintenance: Ensure the jars are clean and sterilized before filling them to prevent bacterial growth.
- Storage: Keep the jars in a cool, dark place to ensure optimal preservation.
