To start preparing these delicious muffins, the first step is to preheat the oven to 180 degrees Celsius for even heating. This will make the baking process much more efficient, and the muffins will have a perfect texture. While the oven preheats, we will take care of the main ingredients.
The first thing we need to do is separate the eggs. It is important to ensure that no yolk remains in the egg whites, as they need to be whipped into a foam. Using a mixer, we beat the egg whites with a pinch of salt until they become a firm and shiny foam, being careful not to overbeat them, so they don’t turn into butter.
In another bowl, we cream the soft butter with sugar until we obtain a fluffy and light-colored mixture. We add the yolks one by one, mixing vigorously after each to integrate the ingredients well. Then, we start to incorporate the sifted flour mixed with baking powder. It is essential to do this gradually, alternating with milk, to achieve a smooth and creamy batter.
After incorporating all the dry and liquid ingredients, we add the egg white foam. We gently fold with a silicone spatula, being careful to keep the batter airy, which is essential for a fluffy muffin. Finally, we add the fresh strawberries, washed and chopped, which will provide a touch of freshness and flavor to our muffins.
We distribute the batter evenly into the 12 muffin cups and place them in the preheated oven. We let them bake for 20-25 minutes or until they turn golden and pass the toothpick test. Once ready, we take them out of the oven and let them cool on a rack.
For decoration, we wash the strawberries, remove the stems, and boil them with a tablespoon of sugar until they become a paste that easily sticks to the pot. After cooling, we chop them in a food processor.
In another bowl, we mix the cheese with sugar, ensuring that the crystals dissolve completely. Then, we start whipping the cream with vanilla sugar and stabilizer until we obtain a firm and airy composition. We combine the whipped cream with the cheese and strawberry cream, mixing gently to achieve a smooth cream.
We decorate each muffin with this delicious cream, placing a slice of strawberry on top. For a festive look, we add colorful decorations, making these muffins not only delicious but also attractive.
