Marinated Pork Steak in Beer
Pork is an excellent choice for a savory dish, and the recipe we propose today is simple yet full of flavors. We start by washing the pork well, ensuring it is clean and ready to be cut. Then, we slice it into thin pieces, about 2 cm thick. This size will allow the meat to cook evenly and remain juicy. If you prefer thinner pieces, they can be left unscored, but for thicker slices, it is recommended to score them lightly to allow the spices to penetrate better.
Each piece of meat will be seasoned with salt, pepper, a pepper mix, sweet or hot paprika, depending on preferences, and oregano. It is important to massage each spice into the meat by hand, so the flavors integrate perfectly. This step is essential as it will determine the intensity of the final taste of the dish.
Once all the pieces of meat are seasoned, we arrange them in a dish, making sure they are well spread out. Over the meat, we add curry and a few chopped green garlic leaves, which will add extra freshness and flavor. We continue to repeat this operation until all the meat is well covered with spices and herbs.
In a separate bowl, we prepare a marinade from mustard, which we gently mix like mayonnaise. Once the mustard is well homogenized, we start to gradually add the beer, stirring continuously until the mixture becomes frothy. This mixture will be poured over the seasoned meat, making sure to cover each piece well. It is important for the beer to reach the bottom of the dish, so we can use a spoon to make light holes in the meat, allowing the marinade to penetrate deeply.
The dish with meat is covered with a lid and left to cool for about a day. This marinating enriches the flavor and tenderizes the meat, making it perfect for cooking. The next day, we take the meat directly from the marinade and place it on the hot grill. Grilling will give the dish a delicious crust, and the flavors will intensify. Ingredients: 2 kg pork meat, 2 l blonde beer, 100 g hot mustard, oregano, curry, sweet paprika, black pepper, mixed pepper (black, white, green, and pink), salt, a few leaves of green garlic (if you don't have green garlic, you can use two heads of garlic or adjust to your taste more or less).
