To prepare this delicious recipe, we will first gather all the necessary ingredients. We start by cutting the sausages in half, making sure to get uniform-sized pieces so they cook evenly. The next step is to peel the potatoes, carrots, and onion, and then slice them into rounds. It is important to cut the potatoes into thicker rounds so they do not crumble during cooking, and the onion should be sliced as thinly as possible to soften and release its flavors.

In a large skillet, we add a very small amount of oil and begin to fry the sausages and pancetta. It is essential to ensure that the oil is well heated before adding the ingredients, so we achieve a nice browning. When the sausages and pancetta are nicely browned, we remove them from the skillet and set them aside. In the same skillet, we add the sliced onion along with a tablespoon of water, cover with a lid, and let it sweat for about a minute. This technique will help the onion become soft and reveal its flavors.

After the onion has sweated, we add the potato rounds and carrots, along with the previously browned sausages and pancetta. We sprinkle a little salt to taste and pour enough water to cover the ingredients, up to the level of the potatoes. Then, we put the lid on the skillet and let everything simmer on low heat. It is important not to lift the lid too often, as the steam helps cook the ingredients evenly.

After about 10-15 minutes, depending on the type of potatoes, we will check if they are almost cooked. Then we can lift the lid and let it finish cooking uncovered on low heat. This step will help evaporate the excess water, concentrating the flavors. Finally, we check if more salt is needed and add freshly ground pepper for an extra touch of flavor.

To serve, we choose deep plates in which we will carefully place the delicious mixture of potatoes, carrots, and sausages. This dish is perfect for a comforting dinner, having a rich flavor and pleasant texture. If you opted for thicker bacon or pork sausages, it is recommended to boil them initially, and the resulting broth should be used instead of water to cook the potatoes, further enriching the final taste of the dish. This simple yet flavorful recipe will surely become a favorite in your kitchen!
