Preparation time: 1 hour 30 minutes
Baking time: approximately 45 minutes (15 minutes for each tray)
Number of servings: 18 muffins

Ingredients:

For the muffins:
- 5 eggs
- 4 tablespoons sugar
- a pinch of salt
- 150 ml oil
- 3 tablespoons hot water
- a packet of baking powder
- 5 tablespoons flour

For the syrup:
- 300 ml water
- 2 tablespoons sugar
- 1 teaspoon rum essence

For the ganache cream:
- 80 ml liquid cream
- 40 g dark chocolate
- 40 g milk chocolate

For the coffee cream:
- 300 ml milk
- 1 tablespoon starch
- 4 tablespoons sugar
- 2 squares of dark chocolate
- 1 tablespoon coffee
- 50 g butter

For decoration:
- 80 g white chocolate
- 1 tablespoon milk
- 80 ml liquid cream
- a little juice from blackberry jam
- food coloring (red and green)

Step by step:

1. Preparing the muffins
Start by preheating the oven to 180°C. In a large bowl, beat the egg whites with a pinch of salt using a mixer until you get a firm foam. Gradually add the sugar, continuing to mix until you obtain a shiny and thick mixture.

Add the yolks, oil, and hot water. Mix well. Incorporate the flour and baking powder, stirring with a spatula until you achieve a homogeneous and fluffy mixture.

2. Baking
Fill the muffin molds (preferably flower-shaped for a playful look) with the obtained mixture, being careful not to fill them to the top, as they will rise while baking. Bake the muffins in the preheated oven for about 15 minutes, or until they become slightly golden. Check them with a toothpick to ensure they are baked inside. After baking, let them cool on a rack.

3. Preparing the syrup
In a small saucepan, combine the water with the sugar and let it boil for 5 minutes. After removing from the heat, add the rum essence to give a splash of flavor.

4. Coffee cream
In a saucepan, put the milk, sugar, starch, and coffee over low heat. Stir continuously with a whisk until the cream thickens. Once ready, remove from heat and add the dark chocolate and butter, stirring well until completely melted. Let the cream cool.

5. Ganache cream
Heat the liquid cream in a small pot, being careful not to boil it. When it becomes warm, pour it over the finely chopped chocolate in a bowl. Mix well until the chocolate is completely melted. Let the ganache cool slightly, then beat it with a mixer until it becomes creamy and thick.

6. Assembly and decoration
Cut each muffin in half horizontally. Soak each half with the prepared syrup, fill with the coffee cream, and add a teaspoon of ganache cream. Coat each muffin with ganache cream, using a spatula for a smooth appearance.

Decorating the tulips:
Melt the white chocolate with a little milk in a small pot over low heat or in a double boiler. Let it cool. Add the liquid cream, mixing until you achieve a homogeneous and creamy consistency. Divide the cream into several bowls and add food coloring or blackberry jam juice to obtain different colors. Use a piping bag to create tulips on each muffin.

Useful tips:
1. Innovation in decoration: You can experiment with various colors and shapes for the tulips, using natural colorants or jam for a unique look.
2. Cream stability: White chocolate offers better stability for the decoration cream compared to plain cream.
3. Adjusting the consistency: If the coffee cream becomes too thick, you can thin it with a little cold milk to achieve the desired texture.

Frequently asked questions:
- Can I use other types of chocolate? Yes, you can use milk chocolate or white chocolate, depending on your preferences.
- How can I store the muffins? It is recommended to keep them in an airtight container in a cool place to maintain their moisture and freshness.
- Can they be frozen? Yes, the muffins can be frozen, but it is better to freeze them before filling and decorating.

Pair with:
These delicious muffins pair perfectly with a flavorful coffee or a fruit tea. You can also serve them alongside vanilla ice cream for an unforgettable dessert.
