Ingredients:
- 300 g fresh mushrooms (champignon or other preferred varieties)
- 30 g dried forest mushrooms (porcini, chanterelles, or trumpet mushrooms)
- 2 medium onions
- 2 garlic cloves
- 1 tablespoon olive oil
- 4 tablespoons sour cream
- 1 teaspoon flour
- 1 small bunch of fresh or dried parsley
- Salt and pepper to taste
- 1 cup of water
Preparation Instructions:
1. Rehydrating the dried mushrooms: Start by soaking the dried mushrooms in warm water for 5-10 minutes. This step is essential to revive their intense aroma. After rehydrating, drain well and chop finely.
2. Preparing the fresh mushrooms: While the dried mushrooms are soaking, quickly wash the fresh mushrooms under cold running water. Make sure not to leave them in water for too long, as they will lose their texture. Cut them into quarters, leaving smaller ones whole for a more rustic appearance.
3. Sautéing the onion and garlic: Peel the onions and garlic, then slice the onion thinly and the garlic into slices. Heat the olive oil in a skillet over medium heat. Add the onion and garlic and sauté for about 5-7 minutes until they become translucent.
4. Adding the mushrooms: Place the chopped forest mushrooms in the skillet, stirring constantly for 10 minutes. Then add the fresh mushrooms and a cup of water. Cover the skillet with a lid and let it simmer for 10 minutes, until the mushrooms release their flavors.
5. Preparing the thickening agent: In a small bowl, mix the sour cream with the flour and a little cold water, about 3 tablespoons, until you achieve a smooth mixture. Then, gradually add a few tablespoons of hot broth from the skillet to temper the sour cream. This trick will prevent the sour cream from curdling.
6. Finishing the stew: Pour the thickening agent into the skillet, stirring to combine the ingredients. Lower the heat and let it simmer on low for 2-3 minutes, stirring constantly. Add salt and pepper to taste.
