Mashed beans, a perfect traditional delicacy for the fasting period, is a simple and quick recipe that combines the rich taste of beans with the intense flavors of garlic and onion. Ingredients:
- 500 g white beans (preferably dried beans)
- 1 large onion
- 5 tablespoons olive oil or sunflower oil
- 2 teaspoons vegeta or salt, to taste
- 2 tablespoons tomato paste
- 3-4 cloves of garlic
- Freshly ground pepper, to taste

We start by preparing the ingredients. It is recommended to soak the beans the night before to reduce cooking time and achieve a creamier consistency. So, leave the beans in cold water from evening until morning.

The next day, drain the beans and rinse them under cold running water. Place the beans in a large pot, add fresh water and a teaspoon of vegeta. Bring to a boil, then reduce the heat and let simmer. It is important to change the water twice during cooking to eliminate toxins from the beans and achieve a cleaner taste.

After the beans have cooked well (about 60 minutes), let them cool slightly. Use a blender to mash the beans, adding the other teaspoon of vegeta, 3 tablespoons of oil, and the peeled and crushed garlic. Blend until you achieve a smooth and homogeneous paste.

Meanwhile, heat the remaining oil in a pan. Add the finely chopped onion and sauté over medium heat until it becomes golden and translucent. Add the tomato paste and let it simmer for a few minutes, stirring constantly. This onion and tomato sauce will add extra flavor to the mashed beans.

To serve, place the bean paste on a large platter and pour the onion and tomato sauce on top. You can garnish the dish with freshly chopped parsley or slices of red bell pepper for a contrast of colors and flavors.

Mashed beans can be enjoyed both warm and cold, alongside a summer salad or as an appetizer on toasted bread. A delicious variation is to add some olives or a splash of lemon for an extra touch of freshness.
