Step 1: Preparing the dough
Sifting the flour is essential for obtaining a fluffy dough. In a large bowl, sift the flour and make a small well in the center. Add the crumbled yeast, 2-3 tablespoons of warm water, and the tablespoon of sugar. Mix slightly, then add the yogurt and cubed margarine. The last ingredient, mineral water, will help aerate the dough.
Knead the dough until it becomes smooth and elastic. Cover it with a clean towel and let it rise in a warm place for about an hour, until it doubles in size.

In the meantime, prepare the filling. In a large bowl, place the well-drained cottage cheese, sifted semolina, eggs (make sure they are clean and disinfected), sugar, and soaked raisins. Add the cognac and mix well until you get a homogeneous mixture.

After the dough has risen, divide it into two equal parts. Use a rolling pin to roll out each part into a thin sheet. Preheat the oven to 180°C and grease a pan with oil and a dusting of flour. Place the first sheet in the pan, add the filling evenly, and cover with the second sheet.
