Cocoa Ice Cream
To prepare a delicious and refreshing dessert, we will start by combining sugar, water, and cocoa in a saucepan. Place the saucepan over low heat, stirring constantly to avoid lumps. When the mixture becomes homogeneous and the sugar is completely dissolved, remove the saucepan from the heat and let the mixture cool to room temperature. This step is essential to achieve a smooth and creamy texture in the final dessert.
In the meantime, we will take care of the eggs. Take 2 whole eggs and one egg yolk and use a whisk or mixer to beat them well until the mixture becomes frothy and slightly lighter in color. This will add air to the dessert, giving it a fluffier consistency. Once the eggs are well beaten, gradually add the cocoa mixture, being careful to fold gently to avoid losing the air incorporated earlier.
After you have well integrated the cocoa into the eggs, add a pinch of salt. The salt will enhance the flavors and balance the sweetness of the dessert. Now it’s time to add the whipped cream. Use fresh, whipped cream that is slightly firm so that it incorporates nicely into the mixture. Gently fold using a spatula to maintain the airiness of the mixture.
Once all the ingredients are well integrated, transfer the mixture to a suitable container for freezing. This will help achieve a creamy texture similar to ice cream. Cover the container and place it in the freezer. It is important to let the dessert freeze completely, which may take a few hours, although it is best to leave it overnight.
About 20 minutes before serving the dessert, take it out of the freezer. This waiting time will allow the dessert to thaw slightly, making it easier to portion and serve. You can serve it plain or garnish it with fresh fruits, chocolate sauce, or roasted nuts for an extra touch of flavor. This recipe is perfect for hot summer days or to impress guests at a festive meal. Enjoy every spoonful of this refined delight!
