Breaded Eggplants with Yogurt and Dill

 Ingredients: 2 eggplants, 1 yogurt, 2 tablespoons of sesame, flour, salt, 2 eggs, oil

Eggplants, a versatile and flavorful vegetable, are ideal for being prepared in various ways. In this recipe, we will focus on making delicious breaded eggplants with a crispy crust that will satisfy even the most demanding tastes.

The first step is to prepare the eggplants. Choose fresh, medium-sized eggplants with smooth skin and no blemishes. Cut them into slices about 1/2 cm thick. After cutting, sprinkle salt on each slice and let them sit for 30 minutes. This process will not only help remove excess water from the eggplants but also enhance their flavor.

After they have sat in salt, rinse the eggplants under cold running water to remove the salt. Then, dry them well with a paper towel, being careful to pat them gently so as not to damage them.

Next, prepare a delicious mixture for breading. In a bowl, add sour cream, a creamy and tangy ingredient that will give a slightly moist texture to the eggplants. Mix well until you achieve a homogeneous composition. In another bowl, combine flour with sesame seeds and a pinch of salt. This combination will add extra flavor and crunch.

Meanwhile, beat a few eggs in another container using a fork or whisk until frothy. Now it’s time to coat the eggplants: dip each slice in the sour cream, then roll it well in the flour and sesame mixture, making sure it is evenly coated. Finally, dip each slice in the beaten eggs so that the crust sticks well.

Heat oil in a deep pan over medium heat. When the oil is hot enough, add the eggplants, being careful not to overcrowd them, so they fry evenly. Fry them on both sides until they become golden and crispy, which will take about 3-4 minutes on each side. Once they are ready, remove them onto a paper towel to absorb excess oil.

Serve the eggplants warm, alongside a side of potatoes with sautéed onions and fluffy dumplings, along with a fresh green salad that will add a refreshing contrast. For an extra flavor boost, you can add garlic sauce on top of the eggplants, which will perfectly complement their taste, giving them a flavorful and spicy note. These breaded eggplants are perfect for a family meal or to impress guests at a special dinner.
