To prepare a delicious dish with kidneys, we start by ensuring that all the ingredients are ready and at hand. The first step is to chop the onion into small cubes, but not too finely, so that it maintains its texture during cooking. Then, the pepper is cut into similar pieces, so that it harmoniously combines with the onion. In a heated pan, we add a little oil and start to sauté the onion and pepper. This process will release the intense flavors of the vegetables, creating a delicious base for our dish.

In parallel, we take care of the lamb or beef kidneys. It is essential to wash them well under a stream of cold water, then cut them in half, making sure to remove the whitish interior, which can have an unpleasant texture. After cleaning them, we soak them in a bowl with water and vinegar for about an hour. This will help eliminate the strong smell and improve the final taste of the dish.

Once the kidneys have soaked, we drain and finely chop them. We add the chopped kidneys to the onion and pepper mixture in the pan, mixing well to combine the flavors. To intensify the taste, we sprinkle a little vegetable seasoning on top and pour in the beef broth, which will add extra flavor. It is important to let the mixture simmer on low heat until the kidneys are well cooked and tender.

When the meat is almost cooked, it is time to add the tomato, which we have peeled and diced. This will bring a touch of freshness and acidity to the dish, perfectly complementing the existing flavors. Towards the end, we also add the freshly chopped dill, which will provide a green note and a special aroma. Once all the ingredients are well integrated and cooked, we can enjoy this savory dish.
