Instructions:

2. Preparing the cream: In a saucepan, combine the milk, sugar, egg yolks, and a pinch of salt. Whisk the ingredients well to achieve a homogeneous mixture. Place the saucepan over medium heat and cook the mixture, stirring constantly, until it begins to thicken and reaches a temperature of about 80°C (do not let it boil).
3. Adding the green tea: Once the milk and egg mixture has thickened, remove it from the heat and add the green tea powder, stirring well to prevent lumps from forming.
4. Incorporating the gelatin: If you used granulated gelatin, incorporate the hydrated gelatin into the warm mixture, stirring until completely dissolved. If you used gelatin sheets, drain them well and then add them to the mixture, stirring until dissolved.
5. Whipping the cream: In another bowl, whip the heavy cream until it becomes firm. Be careful not to overwhip it, or it will turn into butter.
