Liver in Tomato Sauce
This bird liver recipe is not only quick but also extremely delicious, making it perfect for a family meal, especially when you have children who are more picky about food. Livers are an excellent source of protein and nutrients, and preparing them in a way that makes them more appealing is the key to success in the kitchen.
To start, make sure you have all the ingredients ready: 1 kg of bird livers, a tablespoon of brown sugar, 5 tablespoons of tomato juice, salt, pepper, a sprig of thyme (either fresh or dried), oil for frying, 50 g of butter, greens (optional), and milk. The livers should be washed well in several waters, carefully cleaning them of membranes. After cleaning, let them drain in a colander.
To reduce the characteristic bitter taste of the livers, it is essential to soak them in milk for at least 30 minutes. This step will make the livers more tender and flavorful. In the meantime, prepare a large skillet, ideally with a lid, and place it over medium heat. Add the butter and, as soon as it starts to melt, add a few tablespoons of oil. Be careful not to let the butter burn, as its taste will become unpleasant.
Once the butter has reached an optimal temperature, add the livers drained of milk. Let them cook on all sides for 5-6 minutes, until they acquire a nice color. Cover the skillet with a lid and let them simmer for about 10 minutes, turning them carefully a few times. To prevent drying out, add a few tablespoons of warm water to the skillet.
In a cup, dilute the tomato juice with a tablespoon of warm water and add the sugar and pepper. Mix the composition well, then pour it over the livers in the skillet. Let them simmer over medium heat for 15 minutes, stirring gently or shaking the skillet to prevent sticking. Finally, add salt to taste, and for an extra flavor boost, you can also add some spicy seasonings, such as paprika or chili flakes.
The livers are served hot, alongside polenta, rice, or mashed potatoes, and a sprinkle of greens on top will add a fresh and appetizing look. This simple and quick recipe will surely become a favorite in your home. Enjoy your meal!
