Onion Pie
To prepare the delicious onion pies, we will need 8 medium onions, oil, salt, and pepper, according to the traditional recipe we learned from Lucia. If you want to adapt the recipe for a fasting version, you can use a simple bread dough, just like they did in Sugag, an area known for its delicious dishes.
The first step is to slice the onions thinly, either in rings or julienne, following the natural lines of the onion. This method allows the onion to cook evenly and reveal its sweet and pleasant aroma. If you prefer, you can chop the onion finer, but be aware that the taste will change, and the texture will be different. Personally, I chose to sauté the onion in a tablespoon of oil, adding a little salt and freshly ground black pepper. It is important to cook the onion until it becomes just slightly translucent; you should not burn it, but make it tender and sweet.
After the onion has cooled, it is time to prepare the dough. I decided to shape it like a bow, but I also experimented with pies in the Moldovan style, similar to poalele-n brâu. Each variant has its charm! Also, I had a bit of dough left, so I decided to make some small buns, perfect for breakfast, which I served with jam and goat cheese. An absolutely delicious combination!
As for the dough, I encountered a slight difficulty. I bought a new silicone rolling pin, which does its job easily, but out of zeal, I pressed too hard, even though the instructions suggested a thin sheet. I assure you that for Lucia's dough, we must use exactly all the mentioned onions, but without rolling the dough too thin, so as not to compromise the filling.
The taste of the pies was simply fabulous! The dough, tender and with a subtle taste of butter and sour cream, and the sweet and slightly peppery onion created a perfect combination. Each bite was an explosion of flavors, and the pies quickly disappeared from the plate. Whether you make them for a quick lunch or a special breakfast, these onion pies are definitely an inspired choice!
