To prepare a delicious potato gratin, the beginning of the process involves choosing quality potatoes, preferably waxy ones that have a creamy texture and hold up well during cooking. Place the whole, unpeeled potatoes in a large pot of salted water that completely covers them. Bring the water to a boil and let the potatoes cook for about 20-30 minutes, or until they are tender but not falling apart. Once they are ready, drain the water and let them cool for a few minutes, then peel and slice them into thin rounds, about 5 mm thick.

In a skillet, heat the oil over medium heat. In a separate bowl, dissolve the flour in the two tablespoons of cold milk to avoid lumps. Once the oil is hot, add the flour and milk mixture and sauté for a few minutes, stirring constantly. This step is essential for developing flavors and achieving a smooth texture. After the flour and milk have combined well, extinguish with the remaining milk, stirring continuously to prevent lumps from forming. Let the sauce simmer over low heat for about 15 minutes, stirring frequently with a wooden spatula to achieve a creamy consistency.

Once the sauce has cooled slightly, incorporate the egg yolk, mixing well to integrate it evenly. Then add the sliced potato rounds, seasoning with salt, pepper, and a dash of nutmeg, which will enhance the flavor. Preheat the oven to 180 degrees Celsius.

Grease a baking dish with butter and line it with breadcrumbs to prevent the gratin from sticking. Pour the potato and sauce mixture into the dish, ensuring it is evenly distributed. Finally, add the cream on top, followed by the grated cheese, which will form a golden and appetizing crust during baking. Place the dish in the preheated oven and let it bake for 30 minutes, or until the surface is beautifully gratinated and golden.
