Before starting the process of making delicious green walnut jam, it is essential to prepare the walnuts. They should be soaked in cold water for 24 hours. It is important to change the water every two hours to ensure that the walnuts retain their freshness and do not become bitter. This step is crucial as it helps remove the bitter substances from the walnut shells.

After 24 hours, we equip ourselves with gloves to protect our skin from the stains left by the walnuts. It is time to clean the walnuts! Using a sharp knife, we cut the green shell of the walnuts and immediately place them in cold water to prevent oxidation. While we are cleaning, we put a pot on the stove, adding sugar and water. It is essential to obtain a well-bound syrup before adding the walnuts.

In parallel, we prepare another pot of water, which we will bring to a boil. Once the water is boiling, we add the cleaned walnuts and let them boil for 3-4 minutes. After this interval, we drain the walnuts and transfer them to a pot of cold water. We repeat this boiling and cooling process two more times, ensuring that the walnuts become tender and that we move away from the initial bitterness.

The next step is testing the syrup. We take a few drops of the syrup and pour them into a glass of cold water. If the syrup forms a ball that does not disperse, it is a sign that it is ready to receive the walnuts. If not, we continue boiling until we achieve the desired consistency. Once the syrup is ready, we add the drained walnuts and let them simmer on low heat.

After adding the walnuts, we continue the boiling process as for regular jam: half an hour today, then 15 minutes the next day, and another 15 minutes on the third day. Once finished, we transfer the jam into clean, sterilized jars. The jars are sealed with tightly fixed lids, and then we leave them between blankets or pillows until the next day to cool gradually and seal properly.

As a personal note, I prefer to use salicylate for preservation instead of the traditional water bath sterilization method. This gives me extra assurance that the jam will last over time, preserving its aroma and delicious taste. Therefore, patience and attention to detail are essential to obtain a green walnut jam that delights the taste buds of all who savor it!
