Once the potatoes are cut, we rinse them again under cold water to remove excess starch, which will contribute to a crunchier texture.
After we finish with the potatoes, we turn our attention to the spices. We prepare a mixture of olive oil, salt, pepper, and various herbs, such as rosemary and thyme. The latter add a special flavor to the dish, and the combination of olive oil with the herbs will help caramelize the potato slices during cooking. In a large bowl, we mix all the ingredients, ensuring that each potato slice is well coated with this aromatic mixture.
Meanwhile, we preheat the oven to 200 degrees Celsius. We prepare a baking tray, greasing it with a little oil to prevent sticking. We carefully arrange the potato fan in the tray, being careful not to crush them, to maintain their attractive appearance. We can arrange them so that they slightly overlap, but not too crowded, to allow warm air to circulate around them.
After placing the slices in the tray, we can sprinkle a thin layer of grated cheese on top, such as Parmesan or cheddar, to add a rich flavor and a crispy crust. This step is optional, but it will certainly make the potatoes even more delicious.
Once the oven has reached the desired temperature, we place the tray inside and let the potatoes bake for about 35-40 minutes. It is important to monitor the baking process, as the time may vary depending on the thickness of the potato slices and the power of the oven. When the potatoes become golden and crispy on the outside but still soft on the inside, they are ready to be taken out.
