Quick and Fluffy Cream Puff
To prepare a delicious cream puff, the first step is to dissolve the gelatin in a small cup of water, stirring gently until it becomes homogeneous. It is important to keep it warm to activate properly. Meanwhile, you can start whipping the cream for the whipped cream, making sure to chill it to achieve a fluffy and airy texture.
In a saucepan, add the sugar, eggs, a pinch of salt, and 600 ml of milk. Heat the mixture over low heat, stirring constantly to avoid sticking or forming lumps. Once the sugar has completely melted and the mixture is homogeneous, add the flour dissolved in the remaining milk, continuing to stir to obtain a smooth cream. When the cream starts to thicken, remove the saucepan from the heat and immerse it in a bowl of cold water. This step is essential to stop the cooking process and quickly cool the cream.
Meanwhile, you can prepare the gelatin by heating it for a few seconds over the heat, without letting it boil, to melt completely. After the cream has cooled sufficiently, add the melted gelatin, stirring well to incorporate it evenly. Next, add the cubed margarine and vanilla sugar. Mix vigorously until the margarine is completely melted and the mixture becomes homogeneous. Make sure the cream is not too hot when adding the whipped cream, to avoid liquefying it. Add the whipped cream and mix well, obtaining a smooth and airy cream.
For assembling the cream puff, place the first layer of dough in a tray. Pour all the obtained cream, leveling it well with a spatula, and place the second layer of dough on top. Press gently to ensure good adhesion between the layers. Cover the tray with plastic wrap and refrigerate for 5-6 hours or ideally overnight. This way, the cream will have time to set, and the layers of dough will absorb moisture, becoming soft and delicious. When you are ready to serve, cut the cream puff into portions and enjoy a refined dessert, perfect for any occasion.
