Cornmeal Dough Pizza with Ham

To prepare a delicious pizza, we will start by making the dough, an essential element that will make the difference between an ordinary pizza and an extraordinary one. In a large bowl, we will add 400 grams of white flour, 100 grams of cornmeal, a teaspoon of salt, and two tablespoons of extra virgin olive oil. These ingredients combine harmoniously, each playing its role in creating a perfect texture.
In another container, we will dissolve 25 grams of fresh yeast in 300 ml of lukewarm water, making sure the water temperature is ideal for activating the yeast, meaning it should not be too hot, so as not to destroy it. After the yeast is completely dissolved, we gradually add it to the mixture of flour, cornmeal, and salt. Using our hands or a dough mixer with a hook, we will knead the ingredients until we obtain a homogeneous, elastic dough that easily pulls away from the sides of the bowl. Once we finish kneading, we cover the bowl with a clean towel and let the dough rise for 30 minutes in a warm, draft-free place.
While the dough doubles in volume, we can prepare the pans in which we will bake the pizza. We grease two round pizza pans with olive oil, ensuring they are evenly coated to prevent sticking. After the dough has risen, we divide it into two equal pieces and, using a rolling pin, roll each piece into a round shape, taking care to keep a slightly thicker edge to form the crust.
Now comes the creative part! We spread each pizza base with a tomato sauce made from fresh or canned tomatoes, seasoned with basil, oregano, salt, and pepper. Then, we sprinkle our favorite toppings, whether it be mozzarella cheese, mushrooms, peppers, olives, or anything else that catches our eye. Each choice adds a personal touch, transforming each pizza into a culinary work of art.
After decorating the pizza, we preheat the oven to 180 degrees Celsius. We place the pans in the oven and let the pizza bake for 25-30 minutes, until the crust becomes golden and crispy, and the cheese melts and forms a delicious, flavorful crust.
When ready, we take the pizzas out of the oven, let them cool for a few minutes, then cut them into slices and serve hot, alongside a glass of wine or a refreshing drink. Enjoy your meal!
